Quest Bar Protein Cookies

I’ve been a fan of Quest Bars for a little while now. They’re so good! I like to pack some for volleyball tournaments and hiking, but I also like to keep some in my desk for days when I don’t get a chance to eat lunch. Each bar provides me with at least 20g of protein, which I definitely need as an active person!

After work and yoga on Friday, I headed over to Target to pick up some Quest Bars. Did you know that they sell them at Target? I actually had no idea, but I’m glad they do! They have everything at Target, don’t they? That’s why I’m always getting in trouble when I go there! “Oh, I just need to pick up a pack of staples!” (Leaves store with a new desk, a new stapler, poster board, a swimsuit…)

Admittedly, finding the Quest Bars was a bit of a challenge for me. I went to the grocery section where you can find other bars, and I couldn’t find them! I eventually found them in the pharmacy section, which was a bit counterintuitive. They didn’t have all of the Quest Bar flavors, but they had a pretty good selection!

I picked up one box of Blueberry Muffin bars, and a box of Chocolate Chip Cookie Dough bars. I’d never tried either of these flavors, so thought I’d give ’em a whack!

I have seen a bunch of recipes on Pinterest where people actually cook their Quest Bars, and I thought, I gotta try that. And so I did! (See pinable recipe below.) The new recipe for Quest Bars includes Stevia, which I’m not personally a fan of, but once I baked them, it somehow cut down on the sweetness. I have no idea how that works, but it did!

Quest Bar Protein Cookies 

Quick and easy cookies made out of your Quest Bars!
Serves 2
Ingredients: 1 Quest Bar(s),
Ghee or Coconut Oil.

Instructions:  Preheat oven to 325F. Cut each Quest Bar into quarters. Lightly grease baking sheet (I used ghee, but you can use coconut oil). Place Quest Bar pieces onto sheet. Cook for 3 minutes. Remove from oven. Using a spoon, press down on each piece until they take the shape of a cookie. Put back into oven for 1 minute. Optional: Sprinkle with shredded coconut or any other topping your heart desires. Enjoy!
