Back on My #MeatlessMonday Grind

Hey y’all! Did you make it through Monday okay?

Since I decided to get my head back in the game, I figured I would start back up with Meatless Monday again. I like Meatless Monday because it makes me get creative with cooking, but I’m also more mindful of what I’m putting in my body (when I actually remember that it’s Meatless Monday, that is…). One downside to Meatless Monday: I am always friggin’ hungry on Mondays! My body just devours all of the nutrients loaded in the fruits, vegetables, and legumes I consume throughout Mondays, and I am just in a perpetual state of hunger all day. My stomach starts yelling at me, and it is not a good situation.

This Monday, I was a little more thoughtful with my meals. I decided to do food prep on Sunday, which I never do, and made myself a big crock pot of lentil soup (my favorite) last night. I used Alton Brown’s recipe, and it turned out deliciously! One thing to note, though: I am absolutely convinced that grains of paradise — which I’d never even heard of prior to this recipe — is not sold anywhere in the United States of America. I went to three different grocery stores (not just for this make believe ingredient), and it was nowhere to be found! In fact, even the guy at Whole Foods thought I was making it up, and they know all the weird ingredients. 🙁

But anyway, I had a big bowl of the lentil soup for lunch. It was super filling! I was actually surprised, because I behaved myself and had breakfast this morning, which I rarely do because I’m a bad little fitness blogger who can’t get moving in the morning. I had a whole wheat bagel with crunchy peanut butter and a cup of chocolate milk. YUM! The college team I’m assistant coaching played a match pretty far away tonight, and the head coach decided we were going to eat pizza. I had a few slices of veggie pizza, which I inhaled. Whatevs. It actually wasn’t so bad because I was running around with the team during warm-ups and was working up a good sweat. I earned that pizza, daggone it!

The nice thing about the food prep I did last night is that I can rest a little easier tonight. I have my lunch made for the entire week, and I have food for breakfast that is quick and easy. No excuses!
