How to Make Some Triflin’ Tacos

Today, I’m going to teach you all how to make Triflin’ Tacos.

Excuse, me, what tacos???


You read that right! I’m going to teach you how to make a super quick, easy, under 30-minute taco recipe, and you’re going to love it!

Why Are They Called Triflin’ Tacos, and What is Wrong With You, Lex?

I’m calling them Triflin’ Tacos for a very specific reason. I want you to imagine this:
Everyone in your home is getting on your last nerve. They won’t stop bugging you. They seem to be able to sniff you out whenever you seek a spare moment of solitude. They will. not. shut. up. You dream of feeding them and running away to a corner of your home where you can just sit there in peace, maybe read a book and/or drink a glass of wine, and just be left alone. No matter how hard you try, this dream is never realized.
This is where Triflin’ Tacos comes to save the day! All you need are about 20 minutes from start to finish, and these easy tacos are delicious, they create an activity for your lovely family members/housemates to do, and you can grab and go with your own plate before anyone even notices!

I don’t have kids, but I’ve been annoyed by them enough in my life to know that they can drive you insane with minimal effort on their part. I also have been that annoying kid, driving my parents crazy. One thing that was always a special treat and made me feel like a regular Chef Boyardee was building my own tacos! Honestly, I can’t even remember who else was in the room on taco nights because I was so focused on building and eating my taco, trying different flavor combinations, and licking the taco juice off my fingers. 
So why did I call them Triflin’ Tacos? Well, there’s a customizable recipe that seems to never be the same, your hands get pretty triflin’ afterward, and some might view the goal of these tacos (avoiding your loved ones) as triflin’. Do you have a better name for them?

How to Customize this Recipe

All recipes are customizable (except for your granny’s recipes that have been passed down through generations), and these Triflin’ Tacos are too. If you’re vegetarian, you can use extra firm tofu in place of meat and follow all of the other steps identically. I make this with tofu about 50% of the time. You can also substitute meat for vegetables, or play around with the meats you use. This is why it’s customizable. Love your life!
If you don’t like green peppers, don’t add green peppers! Need cabbage in your tacos? What’s stopping you? Sometimes I like to throw a jalapeno in there as well as some tomatoes. 
One thing I will note is that, while Trader Joe’s Taco Seasoning Mix is great, it does have a little kick to it! Further, when I’ve done the Whole 30, I had to try to replicate this seasoning because it does have some sugar in it (last time I checked). I used all of the same ingredients as the TJ’s version, just minus the sugar. Nonetheless, we don’t have time for that today, people! We need to go cook this food and find our hidey-hole!

What about side dishes? You can just add enough vegetables to your tacos or make a quick salad, but I also recommend black beans and/or rice to go on the side. 

Flecks of Lex’s Triflin’ Tacos Recipe

Flecks of Lex’s Triflin’ Tacos

This simple taco recipe is easily customizable and will keep your hungry kids, friends, and family members out of your hair for a little while.

Prep Time: 5 minutes
Cook time: 15 minutes
Yield: 8-10 tacos, 4 servings

Nutrition facts:
280 calories (with chicken breast),

Ingredients:
1 pound of meat or extra firm tofu (I used boneless, skinless chicken breast)
1 medium onion
1 green bell pepper
4 large garlic cloves
EVOO or avocado oil
1 packet of Trader Joe’s Taco Seasoning Mix
Any additional taco toppings you have a taste for.

Instructions:

Heat oil in the pan. Saute onion until tender. Add in green better and garlic. Add meat to the pan. Sprinkle everything with Trader Joe’s Taco Seasoning Mix. Cook until meat is cooked completely. Remove from pan (or don’t). I like to use the same pan to heat up the tortillas if I don’t feel like preheating the oven. Add your favorite toppings to your taco and enjoy!
